Can you change your phone plan to a different one in the middle of the month?
Also, does the deal of getting an additional 500 megabite bonus for autopay apply at any point if I switch into the plan from another one?

You can change your plan in the middle of the month but it is not generally advantageous to do so as there is no prorating at pm. The only time a customer would normally do this would be to replenish data with a larger data plan.
The best way to change plans is to schedule it to change on your next renewal. It is also important to note that if you are on a grandfathered plan once changed and renewed you can no longer get that plan back. You can only choose from the current selection of in market plans on offer from pm.
All plans $25+ come with an additional 500mb of data when registered for autopay. The exception is the $15 plan which comes with 250mb of data but actually will automatically come with that data without needing autopay registration.

yes, you can freely to switch from one plan to another
When you select the plan change, you have a chance to choose to change it at the beginning of the next cycle or change it now
Please note that if you change it now, they will charge you the new plan price now. You can have another xx days left with the current cycle and all would be forfeited. (No refund or no prorated for what you have used or not used for the current cycle)
So, if you are not running out of data or minutes, it is best to choose change it at the beginning of next cycle
Autopay won't be affected. If Autopay is setup, it will stay and you will still get the 500mb bonus with the new plan.

You can make an immediate plan change but you would lose any unused minutes)texts or data. The additional 500 MB bonus would remain as longer as autopay was setup.

Change Your Plan you have to chosen any plan you like it.
When you’re changing your plan, you can choose to change immediately or at your next plan renewal date. To change your plan: sign in to Self-Serve, select ‘Change Plan’ on the Overview page, select the plan you want, and scroll to the bottom of the page.If you’re looking to apply a promotion to your plan, learn how you can do that here.Changing your plan on the next plan renewal dateWe recommend you choose this option because it allows you to use the services you have already paid for until your next plan renewal date. Here are some things you should know about this option:
Changing your plan immediatelyYou may choose to change your plan immediately if you have used all or most of your services, or if your account is suspended and you would like a different plan. Here are some things you should know about this option:
What will happen if my payment wasn’t completed? In this scenario, your account could still move from suspend to active, re-starting your plan cycle and potentially only reactivating a portion or none of your services. If you find yourself in this situation, simply go to the “Payment” tab in Self-Serve, choose “One Time Payment”, and opt to pay the “Amount Due”. This will cover the new plan cost less any partial payment that was taken. After successful payment, your services should be fully reactivated. If your services aren’t restored, please start a conversation with our virtual assistant, SIMon, to submit a ticket to the Moderator Team by clicking here.

@KasiaKro Yes you can change your plan to a different one anytime, however, you forfeit whatever is remaining on your current plan as PM doesn't offer refunds/prorate. Also if you change from a discontinued plan and are grandfathered in, then you will not be able to get back to your original plan.
You can also add extra data or mins add-ons which don't expire to tide you over until renewal. Adding a CC to the account and enabling autopay will give you the bonus data and $2/30 days discount.
