When using this plan down in the states do you have to turn on roaming?

I second this. Just leave data roaming on all the time. There's no risk of extra charges with a prepaid service.
Leave network selection to Automatic, and when you go to the US set your Preferred Network to 4G/LTE because AT&T 5G doesn't work.

I leave roaming ON all the time. Never any fear of unexpected data overages at end of month.

@Joshee You can won’t hurt anything . Might use a bit more battery then it needs to by trying to roam

@Joshee Yes turn data roaming in in phone settings and set phone to 4G /LTE and connect to T mobile or AT&T . If you have any issues with voice set phone to 2G and connect to T mobile

Yes. Turn on the roaming and also go into your network settings and choose T-Mobile and reboot. It's super easy.
