I updated my iPhone from SE to 7, and figured all i had to do was swap out the sim card. No matter what I try it just keeps saying 'no service'.
I've tried rebooting; taking it out and back in again... etc etc.... nothing!

Hi @gbaker - This is a tricky one.
"A glitch in the wireless network roaming partner of your carrier can cause this when it gets you onboard their network per their agreement with your carrier. Such problems are common worldwide. Users report that turning the voice roaming setting off and on again often resolves a "no service" problem."
Maybe this is worth a shot:
Turning on voice roaming may incur roaming charges.
Also you could try, lightly blow into the SIM slot (without the SIM in it).

I won't be able to do that, unfortunately as I don't have another iPhone / sim card

it is possible. I'll message them. It was bought through a secondary retailer but on the BestBuy website.

Have you tried someone else's working SIM, preferably a Public Mobile customer, but if not an active one in the 7 phone?

And, also tried the airplane mode; reset of network etc. etc... nothing.

If possible, maybe try a different working SIM card in the iPhone 7.
Since the PM SIM card works with your old iPhone, PM service end is fine. It is an issue with the iPhon 7. Possibly defective?

Is it possible that the iPhone 7 is locked to previous carrier?
maybe try network reset of the iPhone 7

got it from best buy (a retailer). Unlocked.
Checked it for stolen etc. on the public website - all good.

Where did you get the i7...if you got it used, make sure it's not been reported as lost/stolen and blacklisted somewhere. Go to the top of this page and click Get Started, scroll down to the compatibly area and there's a lost / stolen tool in there.
Keep us posted how you make out.
