Is it possible to activate an Apple Watch under Cellular with a Public Mobile e-SIM Subscription Plan?
Of course it would have to be a 'New Activation' with a different phone number to set up the e-SIM, considering it still isn't available for my currrent account.

sorry, No
Apple Watch requires more than eSIM support on the carrier side, they need to invest a lot more for infrastructure for IMS/Call routing so the watch can receive and send calls. With such large cost, no Tier 3 provider is supporting Apple Watch (as well as Samsung Galaxy Watch, Google Pixel watch), and very likely, they won't in the future. So, check with Tier 2 and 1 providers for that

No. These cell watches are basically accessories to the main base plan. They need to be linked. Public doesn't offer that.
