What is meant by poor signal strength? The bars at the top of your display are almost meaningless.
I suggest that you get a free app like Signal Strength to get a reading in dbm. Also run a speed test and tell us how fast is your download speed
What PM plan are you on? If it is a 5G plan, did you set your recommended network to 5G?
Reset you Network connection in your settings and reboot/restart your phone.
Also, delete your bluetooth pairing on both your phone and car. And then re-pair The Bluetooth connection between the two.
You own a premier Apple iPhone. You can avail yourself of the free support from your local Apple store. If anybody can get your iPhone operating at its peak by tweaking settings, it would be an Apple store worker.
That is basically all you can do on your end. Your next step is to contact a customer agent and see if resetting the network on their end will improve your download speeds and signal. Good luck

I understand I can wait till subscription renewal, but I don’t want to do that. I have a new phone and I want a new subscription. The old one was very inferior and essentially I was being ripped off all this time because everyone else paying the same amount of money had a better plan.

I have reset my network connections in my phone and reset multiple times. My connection in my car

There didn’t appear to be a problem with my connection except when it was connected to my car phone and the signal would drop off, but only briefly from talking from from talking with iPhone they say it is because my signal is too weak, and it is true that I now only have one bar on my old phone. I never had any problems. iPhone 6 was my old phone

do you have any to trouble with voice or did you check speed test to confirm the speed? Sometimes, signal seems weak but it might not affect anything
And make sure both OS and Carrier Profile are updated. Reboot phone and Reset Network Settings
try changing to LTE or 4G and check if speed and signal any better. And try this in different locations

Select “Change on Renewal” when selecting a new plan and then it will change to the new plan on your next renewal date without losing anything. It’s always a good idea to take a screenshot afterward of the upcoming plan in your “Manage Subscription” tab in the event that the change doesn’t take place.
