Older phone - iPhone 8plus - What plans?

What plans can I get for my iPhone 8plus? Can I get a 5g plan and just use the networks compatible with my phone?

no, that is not really correct.   OP  can still get "5G speed" on the 4G network .  As I mentioned clearly above, anyone on 4G plan can only get up to 100Mpbs, but people with 5G plan can get 250Mbps on the LTE network even using the 4G phone.

i remember Iphone 8 can not support 5G. So even you subscribe the 5G plan, you only can get 4G speed.

all the plans are more "speed plan".  The 5G plans give you the best speed and you can use it even with a 4G phones

With a 4G phone no 4G plan, your top speed is 100Mbps.  With a 4G phone on a 5G plan, you can connect without problem and your top speed can be 250Mbps if your phone allows
