Excellent questions. Please see the post titled "How to Call Forward" for details on how to set up call forwarding. According to the same post, your phone does not need to stay on for call forwarding to work (see here for the details).
@Jorno this is correct. Even though you can manage (turn on/off, change number to forward to, etc) the feature from your phone, the forwarding is actually a network feature. So once you've set it up, you can safely turn the phone off and the network will continue to forward the calls.

You can do it on your phone (call forwarding feature) but yes, your phone wil need to remain on.
There are GSM codes that will work too. It overrides the phone as it is system based. Essentially you can turn your phone off and leave it off.

I've used the codes successfully to forward unanswered calls to a 3rd party voip company and I handle all voice mail through them (freephoneline.ca - aka fongo).

it is done throught the phone. what phone do you have apple or android?
also you can install an app and actually have your smses forwarded to her phone aswell.
phone does nt have to be on for call forwarding but does for sms forwarding,

Yes, that should work. Try forwarding to her phone before you leave to be sure. Folks calling you will hear her voicemail message not yours.

I am not absolutely certain, but I think it should work. You need to set up the forwarding while in the home province.
