My phone is showing low data usage during the time I purchased add on data, but the public mobile data usage history shows large amounts of data used during periods my phone was connected to WiFi. There are no automatic downloads set up on my phone I some periods, my phone was not even in use as I was working.

No worries, @Jane10 , public mobile data is populated on usage screens twice daily, usually early afternoon and early morning.
The data displaying there is not corresponding to the time of use of that data, rather the cumulative data consumed in the trailing 12-hour period.

@Jane10 how much data used in the 3 days?
first, for the data usage showing on My Account, PM does not update the data usage constantly. In fact, it only updates it twice a day. So, any entry you see is just a total usage between that timestamp and the timestamp of the previous entry. So, your usage you see while you are at work does not mean it was used during that time but just a total usage for the last 12 hours.
are you on Android? , if so, check the Data usage page on your phone, change the cycle start date to 3 days ago and you can tell how much data used

Public mobile reports data usage in batches usually 1-2 per day. It does not show live accurate data usage. For example, my account usually shows 2 data readings early in the morning (even though my phone is not active).

Both iOS and android support so called WiFi assist where cellular data is running alongside WiFi and cellular data will be consumed if WiFi has any hiccups and is in need of "assistance". You need to disable WiFi assist to prevent this from occurring.

@Jane10 Do you have wifi assist on . Try turning it off . Also check your your usage like this
simply try refreshing the page to check data plan / mins / add ons
