My account shows massive unexplained data usage after midnight when I am not using Public Mobile,
I need to speak to someone on Public Mobile staff.

are you using Android or iPhone? I can explain how to check your data usage on your device more. But yes, you need to check your phone usage history to determine where the data usage might have come from.
for Incognito mode, on your browser, click the 3 dots or 3 lines on the top right, then click New Private Window or New Incognito Window, use that to login My Account

Also - if I understand, I will have to check on my i-phone (Apple, not Android) to see where the data usage might have come from.

PM does not offer daily usage, it just show you the total usage from the beginning of the current cycle. So, you have to check daily.
For actual app usage on your phone, carrier help with that as carrier can only see the total data drew from the network. For that, you will have to rely on your phone usage history.
Android (make sure you change the cycle start date to match PM cycle as PM does not use monthly cycle but a 30 days cycle, so many change on the device is needed):
iOS ( you need to reset the statistics every first day of PM cycle, again, PM is on a 30 days cycle, not monthly)

How can I find out specifically where the data usage comes from ? I can't believe I am using up that much data at any time of the day.

PM does not update the data usage constantly. In fact, it only update it twice a day.
So, any entry you see is just a total usage between that timestamp and the timestamp of the previous entry. The aftee midnight usage you see on the Usage log does not mean it was used in the morning but a total usage for the last 12 hours.
Also, for correct usage reading, always use Incognito mode to login My Account to avoid reading cached old info
