Hi,
My phone number isn't showing up for imessages (or FaceTime) in settings on my ipad or imac, which means that I'm unable to text. The phone number is there on my iphone, but not on any other device. Sometimes I'm able to sign in with my apple id and sometimes that just times out. Either way, without the phone number connected, imessage isn't working. I'm using the same apple ID on all of my devices. I've now spent over 2 hours trouble shooting with Apple support but nothing has worked so far, and they suggested reaching out to my carrier to see if there could be an issue at their end.

Are you using data or wifi only?
What is your default for sending iMessage? Your phone number or an email address?

you don't need to remove the sim card.
Go to Settings on your phone
Then to Messages/FaceTime
Switch iMessage/FaceTime OFF
Wait 5 minutes
Edit your iPhone to your new number Settings> Phone> My number
Turn your phone OFF and back ON
Once phone reboots, turn iMessages back ON again
Wait for it to finish activating in iMessage

Should I remove and put the SIM back in as well? Or is there another way of removing and adding back the phone number? The problem started when my phone started disconnecting from the SIM card, so that I had to take it out and reinsert it.

Even the phone number shows up on your iPhone, you need to re-register it. Go to Settings to remove it, and add it back after a full phone reboot. But if that does not work, you might have to go and ask Apple store as this is and Apple issue and not PM's

Go to Settings > Phone > My Number and ensure that the number displayed matches the ported number.
To resolve iMessage and FaceTime showing the wrong number after a port, go to Settings > Phone > My Number and manually update it, then restart your iPhone. You should also try signing out of and back into iMessage and FaceTime in their respective settings. Additionally, you may need to reset your network settings for a more thorough fix.
