I am trying to change/update my payment method-Visa. The card number is the same. just need to update the expiry and the CVV. When I have done several times a message saying" Sorry we havent been able to process your request please try again later"
As I said I have tried several times and it just wont accept my changes.

Try using an app and give it location permission. Some customers reported it will work that way.
Do not try too many times as your might be blocked. After unsuccessful attempt wait 1h and try again.

Unfortunately this is a known problem. I really hope it gets fixed soon. Some things you can try are using the mobile or desktop site rather than the app (or vice versa) and clearing your cache.
You can also try reaching out to customer service through the chat bot, I'm not sure if they can help with this.
Worst case scenario, you can buy a top up from a gas station
