While I am outside Canada and USA, presumably calls to my number will automatically go to voicemail. Will I receive any notification that a voicemail message has been left?

to keep in touch with fam and friends at home in Canada, you could all download Whatsapp. You'll be able to talk and text using your local wifi while in Jam. Whatapp is free to use.
