I'm in the process of opening a bank account in Greece and one of the proof of identification documents I require is a phone bill from my residence in Canada. My only phone is my cell phone with Public Mobile. However, the bank in Greece has an issue with the Public Mobile invoice as it doesn't reference the mobile phone number. Is it possible to receive an invoice with the phone number reference?

I would use a utility bill or credit card bill or property taxes or lease agreement. Whatever official kind of mail you get at your address. Even if received electronically it would have an official address. This place doesn't really do bills.

PM never does identity or address check as it is only a prepaid provider, so its invoice might not be sufficient for your account opening
and did you download invoices from Transaction page? if those do not have the information you want, you can try to submit a ticket with CS agent and check if they can prepare you better one:
