I'm encouraging friends to join - especially with the amazing deals right now, but I'm super concerned their SIM won't get here by the sale end. Is there any way to "pick a plan" when ordering SIM? They are very interested!

K-Mobile is also a retail partner that sells Public Mobile SIM cards.

Do they live near walmart / wow mobile? You can buy them in some stores right now.
