You need to purchase a new eSIM from your account for $5 on the PM app on the new iPhone.

Then go to the Profile section and change the eSIM number on your account to keep your old number.

This is the drawback with eSIMs and SIMs are better for transferring to a new phone by popping it into the new phone.
