The particular phone that OP is referring to loses the 5G option in the preferred network setting when there's a Public Mobile SIM card in the phone.

While this model is a 5G device, the Canadian verision of this model cannot connect to the 5G netowrk if a Public Mobile SIM card is being used. This is because of the way the device software has been programmed.

@Allgone Usually, phones are set to automatic network selection. If you are not in a 5G area, your phone might connect to the LTE network by default. Review the network coverage map and see if your phone connects to 5G when you're in 5G coverage area.
