Using Pixel 6, sometimes when i'm on 5g (and indicated full reception 5/5 bars) The date stops working, i have to manualy put it on 4g, thenn I have data more consistently. Is there a way the phone can go back and forth your 2 networks without be doing it manually?

I experience the same, so I just leave my phone in 4G because I find it far more stable. It is supposed to automatically switch between networks based on the best connection, but that doesn't always happen, hence why I just leave it on 4G.

Your phone should automatically select the best available network. For example, if you set your preferred Network to "5G (recommended)", your phone will search for and connect to 5G and will automatically connect to 4G if the 5G signal is poor.
Last summer, PM had a big problem with dropped calls. During that time, I communicated with Telus technical support. One of the things that I learned was that 5G may have the faster speed but its range is much shorter than 4G. So, depending on your distance from the tower, your phone will switch back and forth from 5G to 4G/lte. That switching sometimes results in a break in the connection. Telus technical support told me that I would get a more stable connection if I set the preferred network of my phone to 4G/ LTE only. So that is what I have done. FYI, I have a Pixel 7a.
For my practical usage, I do not notice the difference in speed unless I'm running speed test all the time. 4G/lte also uses less battery than 5G. And I do not pay extra for the 5G plans. (Note: Even if you subscribe only for a 4G plan, you can still connect to the 5G network which gets throttled to a slower speed)

If you have an issue with automatic switch between 4G/5G i would just leave it on the 4G for Pixel 6 and you will have a better consistent coverage .
PM max speed for 5G is 250Mbps, 4G will cover a good portion of that.
You can even check the speed downloads while on 4G and you will be around 100 Mbps (if i am not mistaken, 4G up to 100 Mbps), hence would not worry too much about jumping between 4G/5G.
Of course if you need much higher speeds (which 99.9% of population don't), then i would think about some upgrades.

If you have your network settings set to automatic, it should do it automatically.
