To pick an eSIM as your primary on an iPhone, go to Settings > Cellular, select the eSIM under "Cellular Plans," and ensure "Turn On This Line" is toggled on. Then, for your primary data plan, go to Settings > Cellular > Cellular Data and choose the eSIM. For your primary voice and messaging line, go to Settings > Cellular > Default Voice Line and select your eSIM.
