I am currently on $15 a month with 250 MB. Just wondering what will happen if I used up my monthly data. Will they just stop my data, or they will slow it down so I can keep using it ?

In your case with a $15 plan, if data runs out, you can buy extra data add-on, which have. 30 days expiry, or ask support to help to renew your plan early, or change plan using change now option to start a new plan immediately
But...be mindful of when to purchase the add-on. Let's assume you do buy the add-on, then when regular plan renewal occurs...your phone starts using regular plan data...even if you still have somma the add-on data remaining. The 30 day clock will keep ticking and add-on data could be expired before you use it.

Valid question @david82
For the smaller entry level plans such as the $15 and $25 plans, Public Mobile provides a bucket of 3G data which is done when it's consumed for the cycle. After that the only way to access data is to purchase an add-on.
For the higher value plans, they have introduced unlimited data on selected plans which significantly reduces the data speed after the allocated data bucket is used.

It just stops.
