I will want to order a Uber at Miami Airport. What do I need? Just a roaming data plan? Could I use my free international long distance minutes to order a Uber?

@paul9900 Canada/US *plans* most definitely do include roaming. I think you meant that US long distance minutes are only for use from Canada.
This plan, for example, will work in the US without a separate roaming add-on.

JRod is correct. International (Canada and US plans) are for calls made from Canada. If you are in the USA, you definitely need to use the add on. Been doing that for years now. It works spotty at times, but last winter worked fine. Remember to renew it in 15 days. Also, your phone will stop working if you do not have the add on (or buy another SIM card with time and data).

Either buy one of the roaming add-on's or get a travel esim data plan from a companies such as Ubigi or Airalo. Both offer very inexpensive US data and, and they can be setup before you travel.

I’m worried that the wifi signal won’t reach to the area where I pickup my Uber. I’ve never used Uber before. Don’t I need to see (in the app) my Uber approaching?

You would need to purchase a US roaming add-on that included data. Then make sure you have data roaming turned on and connect to either AT&T or T-Mobile. If one doesn’t work connect to the other and reboot.
The international minutes you have can’t be used as they are for calls made within Canada. If you want phone calls while you are in the states you’ll have to use a roaming Talk and Text add-on. There is a roaming talk-text and 3GB of data add-on available if you need to make phone calls while you are in the US. But for Uber alone you’d only need data.
