I’ve looked through the threads of this topic but there’s not a solution as I think this problem is a bit weird.
i got my mother an eSIM from pm but she didn’t tell me she had already paid for a sim from a different company i think freedom. So she had both but pm didn’t work until she shut down the fd. Whenever i assign a contact name for her on my phone, i immediately can’t reach her because it says number not assigned this is also the case with others. This is really annoying as I’ve been trying to find a solution while paying a phone bill for both of us each month, she never transferred her fd number to pm and had two numbers for about a month and now it’s been about 4 ish months only using the new pm number. Idk if we caused an error of sorts but is there a solution for this?

if the PM new number works, you just have to go to iMessage's settings and remove the phone number there. Then reboot the phone. You will go back to the iMessage settings after the reboot and put the new number there to register iMessage. The iMessage registration could take long (you will see it spinning), just be patient and it will be done eventually

Update!
So she still has the old freedom SIM card in her phone so I followed the instructions above and the calls and texts do go through on both ends now!
However I had to give her a new public mobile number because the old one wasn’t working and still said number not assigned when we made calls.
I think I have to wait a bit for the new public mobile number to register to the iPhone for iMessages and text to work because it says that it can’t use the new number for iMessage yet.
I followed apples instructions for adding the number to iMessages but the new number didn’t appear yet but it’s the only one listed in sign in & security. So I think I just got to wait for public’s number to register.
i think her 6 months were near to be over when she paid for another month on freedom but it worked for about a week before someone else had the freedom number, it was all very strange to be honest.

yes the freedom account is no long active! We are not trying to port her old freedom number as someone else already has that number (way too many awkward phone calls, texts and them not answering to figure that out sadly).
I believe the sim is no longer in her phone but I’ll have to triple check, I told her to restart her phone before seeing your reply but I will try the method you said and will post results!

you said "she shut down the fd.", so, the Freedom account is no longer active? is your plan trying to port her Freedom number to PM?
Assume you don't need the Freedom number, make sure you remove the Freedom sim card on her phone, or disable the Freedoom esim.
Then reboot the phone and Reset network settings. Go back to the Sim Manager and make sure the PM esim is not only one there, and make sure it is active, set as Primary (or Turn on this line is enabled if it is an iPhone). Then test making calls and make sure you note the phone number from the caller display of the receiving end. Also, try incoming calls
