I'm on a 5G Plan as well and it never says 5G on my Samsung Galaxy Note 20 Ultra. It only ever says LTE or LTE+ but the speeds are fine, therefore it doesn't matter to me.

That's probably because there is no 5G network in your immediate area. Connect to the 4G LTE network. Your data speed will be nearly the same if not equal to the 5G network.

update Carrier profile

Turn on Mobile network and make sure your location has 5G coverage
