When I travel out of the country, I will be purchasing a 30 days physical SIM card. How do I disable the PM Esim from my iphone and only using the physical SIM card from the local country?

Don't delete it, just go into your sim settings and turn off PM and turn on the new sim. You can also setup multiple esims if you want; that way you can set up a travel esim before you even leave. I use Ubigi, but Airalo is another popular one.
You can see below I have Ubigi disabled right now because I'm in Canada. But I never delete it, I just turn it off. Then when I travel south I turn it on for data, but leave SMS (and sometimes calls) on my PM sim. You can configure it lots of different ways. But don't delete your PM esim!!

This is a tangent response to make you aware that if travelling in Europe, roaming is free in the Euro zone. If I get a sim card in Spain, the plan I get (sometimes for 5 eur you get 4 GB; with the company SIMyo for 2 eur you get 4 GB), would also work in Portugal, France, Italy, etc. This became like this a few years ago and not everyone knows about it.

The PM sim will not work outside of Canada (and the USA if activating something for it). You will not even have to turn off the sim in Settings -> Cellular.
With an iPhone I have never had to restart the phone when changing between sim cards.

I think there is an option to turn off this esim from the iPhone setting. I can turn it back on when I leave the other country.

First, do not delete the PM esim. You don't have to
you can go to the Sim manager and change the default sim from the eSIM to the physical one. It will ask you for a reboot and that is 🙂
