Accidentally deleted my eSim after I got a notification that it failed to install. My issue now is : I cannot get into my account now because the phone number associated with my account was on the eSim. Is there a way to get it resent to me so I can try again, or am I out of luck?

Do you have the original information for installing the eSim that includes the eSim number? If yes, redo the process!!
And just FMI and EOE.....is there not a password on your phone that needs to be entered to delete or change an eSim???

@TrY was the eSIM setup completed and phone was working? I am not sure you can reinstall the same eSIM. You can try to scam the same QR code you got from email and see if it works. If not, you will have to message support , you might have to change it back to physical sim
Add: to access My Account without the phone , On the screen it is expecting you to enter the code, click Resend code and then choose Send email

@TrY You can try support but from my understanding if you delete the eSIM you need to go back to a physical SIM card . But check first with them . Also if you hit resend a few times do you get option to send code to email instead
