I forgot to change my debit card info and my subscription didn't renew. I tried to get into my account but everytime I log in, my only option is to activate a new subscription (new plan, sim and everything) and I am unable to access my account and info.
I managed to add funds to my account by purchasing a voucher, and it seems like I still have service but I am still unable to access my account. What am I supposed to do? How can I access my account info?

I was able to add funds but days later I'm still getting the activation page although I still have service. Customer service has not been able to do anything yet and keep emailing me daily saying they will close my ticket if I don't respond but they haven't even fixed my issue yet. I am beyond frustrated.

You have up to 90 days from the point that your subscription lapses until such time that you lose your number and your account (which would require a new sim, new account, and new phone number).
If you were able to add funds to your account, your line is still active and you shouldn't need to go through all that.
You say you have service? Then why would you think you need a new sim? Maybe you're looking at a cached page when you sign into your account. Try logging in with an Incognito browser window.
