Why do I have to restart my phone to connect to a mobile network every time I leave a wifi area?

make sure you network is set to automatic in your settings. And also set Public mobile as your default network. My wifes iPhone was doing something similar and her settings were messed up. Everytime she went on data it would search for a network. Making Public the default network fixed it.
Hope all is well have a good evening.

Don’t change network settings, reset them. As @gblackmadescribed:

@Eva_F reset your nework settings. And restart your phone if it doesn't automatically. Turn it off, wait 30 seconds and restart it. Stay safe.

You definitely should not have to. Try resetting network settings on your phone.
