Hello,
I'm trying to purchase a US bundle for $30 - it says it successfully adds but then I check my add-on's and it's not there and hasn't deducted the money. Any ideas what might be happening?

@Cambria1 as dust2dust mentioned...is this the 2nd time you are buying this same bundle?
If you are buying it too soon, you'll need to wait longer, or get a different bundle, or get CSA to activate/add the same roaming bundle early.
Ways to contact CSA below:
1-Normally Faster - use this link to: Get Help With Public Mobile Chatbot], also found in various places in Public webpages, OR
2-go to your envelope at the top right of your Community Account which is where your Inbox and Sent messages are. Select the orange/peach color box with the pencil inside it to start a new message. Type CS_Agent in the SEND TO box. This will create a private message to Public Mobile Customer Support (link is provided in #3 below as well).
3 -Use this link (same as #2) Private Message to Public Mobile Customer Support Agents (CSA)

Thanks. I tried incognito and it didn't work. And have tried on several devices.

Is this a re-buy after your other had expired? You need to 1. wait for the other 0/15 days items to disappear off your list, 2. buy the talk/text bundle without data and buy data separately, 3. ask support to buy the add-on.

Login to your account in Incognito/private mode, or clear cache and then check again.
