Having trouble with my phone number. I had an eSIM but reset my phone and currently in apple recovery mode. I need to activate a new SIM card I bought today. I can’t log into my account.

try click Resend code and see if Send email is an option. If it is , then you login and go to Profile page and update sim card number there
if not, then message PM and they will help you with the sim card number update
