I have some questions about the number transfer process if you have a physical SIM in your phone from the old provider and using an eSIM from Public Mobile.
Is the number transfer process the same as it would be if you had a physical SIM from Public Mobile? Do you just keep both SIMs active until the process is complete on the Telus end and then turn off the physical SIM and then the eSIM kicks you onto the public mobile network? I want to switch from Telus asap, but have severe anxiety and so getting to a store to buy a SIM card is a no go for me.

I've been with Public Mobile for 5 years now with one of my lines. I was with Rogers for 25 years with my other line. I was so nervous about leaving. Then I got a really good offer from Telus. So I asked around to my top friends to see who their service was with. Oddly, 7 of 10 were on Telus and they were very happy with the service. So I moved my Rogers line over to Telus and for the last 3 years I've been VERY happy. Then yesterday, out of the blue, I thought "Why am I still using Telus when Public Mobile uses the same towers and they offer cheaper plans with more services?" Now thankfully I have a few SIM cards laying around for Public Mobile. So at lunch I just said screw it. I ported over my Telus number to Public Mobile. I've been happy for 5 years already, why not be happy and save money at the same time? 🙂
With regards to getting a SIM card or eSIM. Now, everyone will have their own opinion. Like @HALIMACS , if I'm incorrect, my apologies brother.... I too prefer a SIM card over eSIM. LOTS of reasons but too long to list. Here are two options to pick up a SIM card.

For me, doing my phone port from Telus was super easy. I ported over 4 co-workers yesterday, all with iPhones. Then I helped 2 neighbors with Samsung phones. It wasn't as easy as the iPhones were but thankfully I've got a lot of brothers and sisters here on the forums to help out when I need it. And guess what, I needed it. And wouldn't you know it, one of the Oracles here gave me the best advice to resolve my problem and it was fixed. Both my neighbors are so happy now. They are saving over $100 together moving from Telus to Public Mobile.
Hope I didn't bore you with my story. It's a little scary when you're not too confident with these sorts of thing but I have to admit, I think helping here on the forums and learning from everyone as really built my confidence. I didn't even second guess moving my Telus line over to PM. Good luck to you.

Do you know if a physical SIM could be purchased at some point and I could switch to using that vs a eSIM? If I cancel with Telus right now, I won't have to pay too much extra but if I have to wait for a SIM card to arrive in the mail, I will.

@ZoeStars process is pretty much same
but what I suggest is to leave the old provider 's physical sim on the phone and wait for the porting authorization text from the old provider and reply Yes first. After replied the text, wait another hour and remove the old physical sim, reboot phone and test the eSIM. Make sure eSIM is enabled (or on iPhone toggle on Turn in this line and set as Primary)

You might wish to go with a physical SIM card. They can be moved from device to device.
Await the Port Authorization request with the prior provider SIM card in (or, e-SIM), reply YES within 90 minutes, then when the old service no longer works, replace with the physical SIM card and set the device to use the physical SIM slot vs the e-SIM under your SIM manager settings.
