I/m planning to switch to the $15/month 100 minutes unlimited text 250 MB monthly plan. There is a holiday free add on of 2GB data. Will this data be renewed month to month as a free add on bonus data? And will it stay as long as I am with the plan?

It will not renew, it is a one-time add-on that stays on the account until it is fully consumed
