After placing the order for Physical Sim and subscribing for the plan, Can we come to know in our account whether the Sim has been dispatched and what number has been allotted to me.

No, there is no way to track SIM cards. They are sent through Canada Post. When did you order it? Can be up to 10 business, more with the holidays.
Many purchase from a SIM PM from Telus/Koodo/mobile Klink store if they have on hand.
Then, update the number in their account profile.
