Hi! I’m at the apple store now setting up my new phone and I’m trying to transfer my eSIM to my new phone but it tells me that I am Unable to transfer the phone number and to contact public mobile. Trying to sort this ASAP since I’m at the store now

On your new phone, install the Public Mobile App and log in with your details. Once you're in click the plus button on the bottom left of your screen and tap on "Subscription and add-ons". Then scroll down and tap the button "Shop SIM card now" and tap on eSIM. (You will have to re-purchase an eSIM for $5), then just tap on Pay now and follow the instructions on your screen. Hope that helps

So, as I use a physical SIM card (as they are WAY better than e-SIM), I suspect that you can repurchase an e-SIM through your self-serve account under your profile.
I can't be certain, but perhaps try there.
Also while on self-serve, check the add-ons or other items you might purchase for an e-SIM option.

You can't transfer an e-SIM @Mohman
You have to repurchase one through public mobile to install on a new device.
