If I switch to a Canada/USA/Mexico plan for a month of travel, can I switch back to the plan I used to have before traveling?

There isn't any way that anyone can say that for sure as it depends on the specific plan and which plans are offered to the specific customer at the given time. It is entirely possible in some cases to change plans and then switch back to the same plan as before.

another option is...when you get there, buy a sim and cheap plan from Telcel. The plan I get is 200 peso (about $20Cdn) and you get unlimited calling to Canada / US and Mexico for 30 days....along with 3.5Gb's data. You can find that plan and the sim in any Kiosko or OXXO (much like 7/11). No esim available for prepaid plan...just hard sim ...they refer to them as a chip. All unused data rolls over to next time as long as you renew before current plan expires. I take the $200 peso plan but have a look if there's something that you like better...

@MrFX62 you can only change to plans available on your My Account > Change Subscription page. So, it is unlikely you will see the plan before your travel again in that page
If you are going US , better to just buy roaming add-on. If you are going Mexico, buy travel esim instead
