If I have the 60GB Canada - US plan on a sim in my phone; would I be able to purchase another SIM for my hotspot device that can share that data usage? The hotspot will be used in my RV when I travel.

this is untrue. PM's 5G is the same as Telus' 5G and they both have a speed of 250Mbps.
There is no 2Gbps service with Telus, however, there is a 5G+ service at 1Gbps with Telus with an extra charge

Just use wifi from whatever device. You don't need another cell service.

another sim means another account, yes, you can setup another account for hotspot, PM does not stop that
But, you cannot buy another sim for the same account with your current 60GB for hotspot. Once account one sim card. If you are thinking hotspot with the same accoount, you can hotspot from your phone
