Is there any way I can check my text messages while not in Canada, U.S., Mexico?
As far as I know, a Public sim card won't work on networks outside of these countries.

Here are the 2FA options which have worked for me (you need Wi-Fi or an esim mobile data):
1. Some organizations have a mobile app for login or authentication.
2. Some organizations give you the option to receive the 2fa code by email.
3. Some organizations give you the option to receive the 2fa code by a telephone voice message. I set up a free Textnow Canadian telephone number on my phone. I then call forward my public mobile number to TextNow. When I'm overseas, I request the 2fa code by a voice call. The Bank sends the 2fa code by a voice message to public mobile, which call forwards it to my TextNow, and I get the code by a telephone voice call.
4. Some organizations allow you to authenticate by answering security questions instead of typing in the 2fa code.
5. If absolutely necessary, I have called the organization to temporarily disable the 2fa requirement while I'm traveling.

if you have an iMessage, you will still be able to receive friends who sent you iMessage or RCS
but if you want to receive Bank's 2FA, then you will have to make sure you change to receive via email

if you're going to have access to free wifi or buy a data package....consider downloading free voip app such as TextNow. It's free, you select a free Cdn cell number and you can send / rec sms plus make calls / rec calls using wifi or separately purchased data. I've used it only while in Mx and seems to work just fine.
Another option is WhatsApp which also uses your local wifi or data. You can message back and forth, call back and forth for free using wifi or separately purchased data....BUT...everyone you communicate with, must also have the WhatsApp app on their phone too.

If you have an iPhone you could use iMessage .

you are correct...will not work outside Canada / US / Mx.
