When I try to start the process I get invalid number, but I know the number works cause I’m using it currently. How do I transfer my eSIM to another iPhone

what you have done is to setup a new account, which is not the correct way to transfer eSIM to new phone
To move eSIM to a new phone, you need to buy a new one. Download the Public Mobile app on your new phone. Login using the same email address you have been using. If you have problem with receiving 2FA code, click "Didn't Receive code" or "Resend code" and choose either Send email or Send voice message
Once logged in, Click Account from the bottom, then click Purchase SIM Card and select eSIM.
Once it confirms your phone is eSIM compatible, click Pay $ and Install
