Probably, because I am no longer that familiar with the Tech, terminology and steps involved.. (I'm old buck! :-)) I was told that I get some sort of PIN when the eSim is activated and this is required for support from PM if required in the future. Is that not correct? Right now everything seems to be working... Do I just stop and say all's good?

you can make calls, why you still try to "activate"? check if the installed PM sim is enabled (on iPhone, only need to toggle on "turn on this line", then Reboot your phone and click Reset network settings

I removed my old (physical sim) and made my Public Mobile eSim primary. I can make phone calls now. However, when I try again to activate the eSim it says "Unable to activate eSim" To me that says something is still wrong.

fisrt, make sure your old physical sim card is removed , or if it the old carrier sim is esim, disable it from Sim Manager or Settings->Cellular
On the same Sim card Manager, or Settings->Cellular screen, check if Public Mobile esim is there. If it is , make sure it is set as Primary and enabled (or Turn on this line is enabled), then Reset Network settings
