Then in the event of an iPhone, would it not be prudent to set up iPhone to only receive texts or iMessages on a registered phone number only and not have any registered email addresses?

text has nothing with data usage. she needs select t-mobile and roaming. free voip is another option.

If she has an iphone then that's a whole other ball game. Yes you can send an SMS. Yes she can receive an SMS if connected to T-Mobile. iMessage introduces a whole other problem that it prefers to need the internet whether by cell data or wifi. You would need to send as SMS to her phone number...not email address.

If you are in Canada and wife is in USA then she should be able to receive a text with out a USA add on. But sending is a different story.

That's doesn't sound right because USA add ons last for 10 days or 240 hours.
She might have just run out of the data with the add on she bought.
Make sure that she chooses T-Mobile as the network of choice, from inside the settings in the phone. Make sure she has roaming turned on, in the settings in the phone too.

You can use free VoIP app to make free calls and text. Use TextNow. It works as long as you have Wifi there in New York. Of course, you can also check out local data preaid sim

Your wife should be able to receive your text. But she needs to have a roaming add on to reply.
