I’m on a subscription currently. But I was wondering what would happen if I unsubscribe? What would happen to my phone number and would others still be able to call me or would it be in no use until I subscribe again?

OK great. Thanks. I'll assume unsubscribing is fine and my phone and plan will all work, unless my renewal comes to date and I haven't made payment yet.

The option is poorly named. It's only a "subspription" to the autopay option. It's unlreated to the actual plan. If you let a plan expire and it doesn't renew, resubscribing would not get your service working again. You would need to manually pay. If you do not want your credit card automatically charged, you never have to resubscribe, but you will need to remember to do make the payments yourself. Other than convenience, there is zero advantage to the customer to using autopay.

You're subscription would stop at the end of your billing cycle.

@Zakarya unsubscribing means turning off Autopay. So, your account won't renew automatically at the end of this current cycle, unless you manually load up fund before that day.
In your case, even your unsubscribed, your will still have full service until the end of the current cycle, Jun 2
