Every night between midnight and 1am there are 2 huge data dowloads filling up my data limits. I'm not awake that that time so what data is downloading and why is it so huge it's filling up my quota?

The amount is acutally 100 MB. 100Mb is 1/8 of the amount.

The 100Mb is daily startup cache usage. System will add it back daily. So, in the end, you didn't lose any data from that cache usage

@JWHB Best thing is to just toggle off cellular data unless you need it. There's usually a quick access toggle by swiping down from the top of the screen.

I only use my phone for maybe 3 messages a day and maybe 1 phone call, that's it but the downloads are between 5 and 90 MB. That's huge for so llittle use.

PM does not update the data usage constantly. In fact, it only update it twice a day.
So, any entry you see is just a total usage between that timestamp and the timestamp of the previous entry. The early morning usage you see on the Usage log does not mean it was used in the morning but a total usage for the last 12 hours.
Also, for correct usage reading, always use Incognito mode to login My Account to avoid reading cached old info
