I have an email that is no longer existent, so I have no way to sign into my account to change the expiry date on my payment card because it sends security code and I have no way to access it!!

You have active service now? or when you last got working service from PM??
try to use the Reset Password link there on the login page (or direct link: https://myaccount.publicmobile.ca/en/forgot-password) enter any possible email addresses you could have used and see if it works

You could pay by voucher or real time payments which would reactivate your services and then you could use SMS for the 2FA verification.
Then afterwards get support to change your registered email address. Remind them to change it in two places in their system
