I can make and receive calls, my phone shows LTE full bars signal, I can surf the web using the mobile data.... but as of today I cannot send SMS messages, it says "Network is not ready. Try again." immediately when I hit the send button.
Seems like my phone can't connect to something, not sure what....

I meant to update the thread. I figured it out. It was indeed Google Messages.
I have one of those rare rooted phones that I use for custom Android app development. It could be that google has finally pulled the plug on this app on rooted devices (they hate us), I don't know.
I had to root my phone to put updated Android OS on it, because apps I needed would not work on the stock android version and google stopped updating the Pixel 2 long ago.... since then I now develop custom apps (for myself) and sideload them to the phone.
I switched to using my updated ROM's built in messenger app and it's working fine now... until March anyways when 3G calling drops and I need a new phone.

Try Uninstall Google Message, Reboot phone and Reinstall and Re-enable RCS
If issue persists, ask PM to check and re-provision account

This was a good idea! But, after disabling RCS entirely in the google messaging app, AND rebooting the phone (which is again, a Google Pixel 2) it still doesn't work.

Do you have RCS enabled? If so, perhaps try turning that off and see if texts work.
