i have reward 100 points. Can I just set them against my bill by clicking the $15 tab several times or do I have to do it once per month?

Yes, you can redeem as many as you can, 15 points for $15, all will go to available credit for the next payment and the following payments

You may redeem 15 points as many times and as often up until your points run out.  Each 15 point/$15 redemption needs to be done in a seperate transaction.
