Thanks a bunch! I have an ancient flip phone (Alcatel) and want to get into the 21st century.

@markus1 If you mean that you want to transfer your cell service, follow @BKNS27 instructions. If you meant other stuff like contacts, pics, videos and apps…. iPhones are very easy to transfer old to new using the QuickStart method. Check out these detailed instructions from Apple: https://support.apple.com/en-ca/102659

Do you just mean to keep using your service on the new phone or are you asking how to transfer contents such a contacts and pictures to your new device? While it's possible that minimal amounts of information saved to your SIM card, simply taking your SIM card out and putting it into your new phone won't transfer most content. The easiest way to move files over might to copy files over to a computer and to then connect the new phone to your computer via USB cable and copy the files to your new phone device.

If you have a SIM, simply pop it out and into the new phone and you are good to go.
If it was an eSIM, you need to download the PM app then login to your account and purchase a new eSIM. You will be charged for it but you will receive a credit back into your account...It is free.
