Am I able to retrieve accidentally deleted text conversation?

You should be able to retrieve it in the iMessage app in the Recently Deleted section in your phone settings unless your phone is set to have Message History keep after 30 days, 1 year or forever on iPhone

no carrier will keep your message for you, it's a privacy issue
you have to check if you have automatic backup with iCloud or Google
