I was recently travelling and downloaded eSIMs whilst I was away. I am now back in Canada and using my Public Mobile SIM again but every few hours it disconnects and says "no SIM". To fix this I have to take the physical SIM card and put it back in. I called Apple and they said that Public Mobile need to reset my SIM for me. How do I do this?

Try removing the esim plans from settings:

It sounds like Apple staff doesn’t know and getting you bad advice.
This is a setting issue so go to Settings>Cellular>Network Selection and set it on Automatic then reboot your phone by powering it off.

@emmajbailey17 - I am not sure why public mobile needs to do something?
Is your public mobile account still ACTIVE? Can you log into My Account?

@emmajbailey17 Do you have another phone , you can try the SIM card in see if it works , then out back in your phone
