If I buy the wrong plan in the public mobile app, and I can’t use the data because I’m in the states and not in Canada. Could an employee change the plan to the right one?

You can change the plan yourself online and login to your account and have the 2FA code sent to your email.
Remember that you need to change your plan NOW but you will be charged for your existing plan and new plan.

if you just joined, then yes, it is possible to change plan with the help of PM support.
Just open ticket with PM using the Orange Chatbot icon on the lower right. Type the question Submit ticket and select Contact Us to get to ticket open screen

@Andre29w You should be able to change the plan in your account app or website , but if you have ent activated yet and selected wrong plan then you can ask support to help change it for you instead
