What is the best course of action if we forgot to cancel the auto pay function and the user will be gone for another two months. We were charged yesterday and I'm looking for any solution to remedy this

Since Public Mobile is a prepaid service, there's little in the way of official recourse. As suggested give the moderator team a private message and see if they will offer some goodwill. Good luck.

You may ask that this charge be applied after the user comes back from the trip.
