If I buy a U.S. roaming package does it start immediately or can I set a start date?

Starts right away. If you buy it at 10pm...that counts as day 1. Plan your purchase wisely !

Using wifi, you can consider getting the 10 Day US Roaming add-on after you get to US. Walmart and most coffee shops have good wifi nowadays.
