You can't change the self-serve email yourself. You'll have to ask CS for help:

Type "ticket" > Click "Contact Us" > Select your issue > "Click here to submit a ticket↗"

Edit: After changing your self-serve email,don't forget to change your community email to match if you eventually want your community rewards credited to your account.
